These are just gorgeous biscuits..easy to make and look so good on the plate too. They’re not brick hard like the commercial ones..these are a firm favourite in our house.. The biscuit jar and the cake box never seem to stay full for very long at all. Hope you enjoy them.

Using paper cupcake cases I coated the inside of the cases with melted white chocolate..I used Wilton candymelts as they set nice and quickly.. When they have set, with heart in your mouth lol, carefully peel away the paper. You should have a complete replica of a cupcake case but in gorgeous chocolate.
Place inside of that a cut circle of sponge cake of your choice,to fit. I then poured creme of lemoncillo liquer onto sponge and topped with some bluberries. For the topping I used mascarpone cheese with my homemade lime curd mixed in! whipped well with a little cream and then piped onto the top..
With the alcohol its more of an adults cupcake but the beauty is any choice of filling or topping can be used and they look so pretty..ideal for a dinner party or special occasion.
